01 - 7 oz spaghetti or other long pasta
→ Sauce
02 - 2 large eggs
03 - 1/2 cup grated Parmesan cheese
04 - 1/4 cup heavy cream
05 - Salt, to taste
06 - Freshly ground black pepper, to taste

07 - 3.5 oz diced pancetta or thick-cut bacon
→ Extras
08 - 1 clove garlic, peeled (optional)
09 - 1 tbsp olive oil
# How To Make It:
01 - Bring a large pot of salted water to a boil. Cook the spaghetti according to package directions until al dente. Reserve 1/2 cup pasta water, then drain.
02 - Heat olive oil in a large skillet over medium heat. Add pancetta or bacon and cook until golden and crisp. Optionally, add the whole garlic clove for flavor and remove before proceeding.
03 - In a bowl, whisk together eggs, grated Parmesan, heavy cream, salt, and freshly ground black pepper until smooth.
04 - Add drained pasta to the skillet with pancetta off the heat. Quickly pour in the egg mixture, tossing vigorously to coat evenly and create a creamy sauce. Adjust texture by adding reserved pasta water as needed.
05 - Plate immediately, garnishing with extra Parmesan and black pepper to taste.
