No-bake carrot cake bliss balls—dates, walnuts, oats and warming spices for a wholesome, grab-and-go snack.

# What You'll Need:

→ Base

01 - 1 cup raw walnuts
02 - 1 cup rolled oats (use certified gluten-free oats if required)
03 - 1 cup pitted Medjool dates (about 10–12)
04 - 1/2 cup finely grated carrot (about 1 medium carrot)

→ Spices & Flavor

05 - 1 teaspoon ground cinnamon
06 - 1/4 teaspoon ground nutmeg
07 - 1/8 teaspoon ground ginger
08 - 1/4 teaspoon sea salt
09 - 1 teaspoon pure vanilla extract

→ Optional Mix-ins

10 - 1/3 cup unsweetened shredded coconut
11 - 1/4 cup raisins
12 - 1/4 cup chopped pecans or additional walnuts

# How To Make It:

01 - Place the walnuts and rolled oats in a food processor and pulse until finely ground and uniform in texture.
02 - Add the pitted dates and finely grated carrot to the processor along with cinnamon, nutmeg, ginger, salt and vanilla; process until the mixture forms a sticky, cohesive mass.
03 - If the mixture appears dry or crumbly, add 1 to 2 teaspoons of water and pulse again until it holds together when pressed.
04 - Transfer the base mixture to a bowl, stir in the shredded coconut, raisins and chopped nuts if using, or pulse briefly in the processor to incorporate evenly.
05 - Scoop tablespoon-sized portions and roll between your palms to form even balls, pressing gently to remove air pockets.
06 - If desired, roll each ball in additional shredded coconut or finely chopped nuts to coat.
07 - Arrange the balls in a single layer in an airtight container and refrigerate for at least 30 minutes to firm; store in the refrigerator up to one week or freeze up to two months.

# Expert Advice:

01 -
  • Nobody suspects these are healthy—all they taste is cake in every bite.
  • You can make them ahead and they last all week, so spontaneous cravings meet their match.
02 -
  • If you rush the pulsing, big oat bits make the balls crumbly—better to pulse longer so the mix sticks together seamlessly.
  • Once I forgot the salt, and everything tasted flat—that tiny pinch matters for real carrot cake vibes.
03 -
  • Older dates can be revived in hot water for ten minutes to soften them up.
  • Blending the carrots before adding keeps the texture smooth and stops big carrot threads from sneaking through the bliss balls.
